As I shared before, my son requested me to bake for his friends. I made two bars both with caramel inside. I always love caramel. Whenever I think of something to give away, I know that bars with caramel wont fail me. This is the second one I made and its fully loaded with caramel, chocolate chips and pecan. The precious pecan nut is actually a bonus. I have left over last holiday season so I decided to mix in. In the end my son also brought some to his classmates and yes, it was a hit. They all love it! What made me laugh was one of his classmates told him she is on a diet but she would like to have some for her mom. Of course my son did bring some for her mom. I find the gesture so thoughtful. I wanna be her mom too… LOL!
2 cups all purpose flour
2 cups quick cooking oats
1 1/2 cup brown sugar
1 tsp baking soda
1 1/4 cup margarine, softened
1 cup caramel topping
3 tbsp all purpose flour
1 cup chocolate chips
1/2 cup pecan, chopped (you may use other nuts)
Preheat oven to 350. Use a 13x9x2 inch pan and line it with aluminum foil, then spray with oil or smeared with butter. Set aside
In a mixer or bowl, combine: flour, oats, margarine, sugar, baking soda and salt. Beat at low speed until crumbly. Divide the mixture into 2
Spread the first half of the mixture on a pan, bake for 10 minutes. While baking proceed on making your caramel, you can see it here: Brownie Caramel Chocolate Bars
After baking the first half, let it cool first then sprinkle chocolate chips and pecan on top, finally pour over the caramel. Then sprinkle the second half of the crumbly mixture. Bake for another 18 minutes.
Cool for an hour before slicing or better chill in the fridge for two hours. Again it will give you 24 slices.
Oh my goodness, I never thought that oats could be that good. Obviously Im not a fan of it. But due to aging, I have to like oats. I am now into the world of acceptance. Seeing these magical bars with caramel and chocolates swept me off my feet. Now I am really back again.. yes I am.

Happy New Year from my family to yours. Brief update: my children have grown already,by age and height of course not by numbers..he he . This post is in honor of my son’s request. He wanted me to bake for his friends and for that I am obliged to do so. I just hope that my effort wont fail him..I know he brags that his mom can bake..really bake and that’s me..Awwwww…proud mom eh..Lol!. My place also has a new face. How would you like a brownie with caramel and chocolate? The combination is interestingly good; brownie,caramel and chocolates.Certainly you will not pass on this.When I first made these bars..I never thought its gonna be that good..but gosh,they’re heavenly.
For the brownie:
1 cup butter,cubed
1/4 cup cocoa
1/4 cup black cocoa powder
1 1/2 cup white sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cup all-purpose flour
For the caramel:
2/3 cup butter
1/4 cup brown sugar
2 tbsp light corn syrup
1 can condensed milk
1/4 cup cornstarch dispersed in 3 tbsp water
In a saucepan,combine all ingredients except cornstarch with water.Cook until thick and caramel in color for about 30 minutes, then stir in cornstarch with water,mix until caramel is thick.
For the chocolate topping:
1 cup chopped dark chocolate
1 tbsp butter
3 tbsp heavy cream
Combine all in a dish. Microwave until just half melted.Stir until melted and combined.Set aside.
1.Prepare a square baking pan 8x12x2inch,line it with aluminum foil.Spray with oil or smear with butter.
2.In a saucepan,put butter,cocoa powder and tablea .Stir over low heat until melted and smooth.
3.Remove from heat.Add sugar and stir until incorporated.Add vanilla and eggs,one at a time.
4.Stir in the flour until just combined.Spread the mixture in a ready baking pan and bake it at 180 or Â at bake it at 180 or 350 for 30 minutes.Let it cool.
5.Once caramel is done,immediately pour over the baked brownie.Chill for about an hour in the fridge.Then proceed on making the topping.Spread over the caramel layer and chill until set.You will have about 24 squares.
Note: Caramel is best done after baking the brownie.If you want a better squared cut, use a sharp knife dip in hot water,dry then cut.
Hmmnnn…I know you wont say no..I tried to cut them nice and clean…but sorry I’m not that good in that area.I just want to grab them, eat them…
I really..really tried my best not to eat..but the chocolate seems to melt in my fingers..and I realized I must go ahead and try..why not. Lets eat.Lets giggle.Lets be merry.

These days I rarely clean my kitchen cupboards because I dont have time or I am too tired to do it or I just couldnt care any more. Besides it would always appear in two ways..crampy, messy with a pack of this and that, mainly left over of everything or it could be spacious, empty and crying for refill… lol! Please welcome the first among the set of goodies and honestly these nutella cereal mix squares are promising. I am inspired to just leave my cupboard the way it is.. refill..refill.. then bake bake bake.. Oh goodness, when I clean then it means more yummy treats. My son recently is complaining that I am ruining his diet regimen. You see my son is a health buff.. He goes to gym, He jogs and he is conscious of his food intake. These nuttela squares are such a tempatation to him and you know his mom..and thats me..Im a big Demonyita… go ahead my dear son.. enjoy…LOL
The taste is so incredibly good…I never thought Nuttela would go better with Fitnesse Fruit Mix. They are lovely and forgive me..as I photograph them I also eat them…bite ..bite..bite…
Take a look, come closer..dont go please..lol! Im seeing fruits, cereal, walnuts and choco.. the texture is soft yet a little crunchy and nutty. Why would I deprive myself from enjoying these squares of joy..no I wont but I dont have time so I told myself..ok tomorrow I will enjoy them…
I needed to make them feel that they are secured and truly important so I arranged them like muffins nevertheless they wont be safe..in an hour or two..they will be gone. I am so dumb.. how come I didnt keep for myself. Arriving home late, I have craving and they are nowhere to to be found… all gone.. Thank you..

I am thrilled and honored to be featured this week at The Saturday Evening Pot:Make a Food-‘e’-Friend.What is so special about this site is that there are two people behind it…The Chef and The Lucky wife…and they are actually husband and wife.Their blog also portrays diversified recipes including low allergen recipes and I truly appreciate that they are willing to try foods from different cultures.I remember The Chef and the Lucky Wife passed a Lovely Blog Award to me and for that they chose my Braised Pork Filipino Humba as one of the dishes that they would like to try. When I started blogging,no one taught me,I just knew I wanted to make one about food and life in general.The Saturday Evening Pot:Make a Food-‘e’-Friend is the first food gathering I ever attended and linked up until it became my weekly routine and a favorite until now.I hope you can try visit The Chef,The Lucky Wife and The Well-Fed Kids kitchen..indulge and be a part of their quest…of the the Saturday Evening Pot.By the way, The Chef is open for question and discussions..you might wanna throw him some questions too..For this week,I am reposting one lucky star in my kitchen.You see the lucky wife asked me about a personal recommendation among my creations and I would love you all try our our Filipino Bar:Food For The Gods.I am sure you are familiar with it.We have two popular bars in the Philippines,Butterscotch and Food For The Gods.These two are both Filipino specialty and we all love them.Butterscotch is usually a favorite item for pasalubong or present and we eat this anytime of the year.On the other hand Food for the Gods is available and an old time best give away during Holiday Season (Christmas and New Year’s Day).But then I don’t wait for holiday season cause I can just bake and enjoy Food for the Gods anytime.The name itself is a mystery besides we don’t produce dates and walnuts in the Philippines.I grew up knowing its Food for the Gods,that it has dates and walnuts.I believe that it is also a Spanish specialty and the origin theoretically can be traced to the Arabic occupation of the Ibizan Peninsula from 740 to 1235 AD and the exploration of the Arab world by the Spanish and Portuguese.I read and I tried to know why its called Food For The Gods but I really cant find any history or reason why its called that way.Well,I just thought of Greek Mythology..and that Im one goddess who can make my own bar and eat it right after its baked and my power is that you will all go to your kitchen and bake your own for family and friends…lol!
Here is my recipe for Food For The Gods.Brace yourself because its a unique version and I am proud of its heavenly taste.
1 1/2 cup butter melted
3/4 cup brown sugar
3/4 cup white sugar
4 large eggs
2 tbsp molasses
2 tbsp honey
2 tsp vanilla
2 tbsp brandy(optional)
2 1/2 cup all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup chopped dates
3/4 cup chopped walnuts
3 tbsp brandy,to soak dates and nuts(optional)
3 tbsp all purpose flour ( from 2 1/2 cup flour)
3/4 cup chocolate chips
If you like your bars to have longer shelf life then you may add brandy.During Holiday Season,I prefer to add brandy.Combine dates and walnuts,then soak them in 3 tbsp brandy.Set aside for 3 to 7 hours.Drain any excess liquid then toss with 3 tbsp of flour taken from 2 1/2 cup flour and in case you don’t want to put brandy,then you can just toss dates and walnuts with 3 tbsp flour.Sift flour,baking powder and salt.Set aside.
In a mixer bowl,mix butter and both sugar,brown and white until soft and smooth.Then add the eggs,one at a time.Continue mixing and add honey,molasses,vanilla and brandy(optional).Make sure the ingredients are well combined.
This time add slowly the flour mixture but mix them by hand..(of course with the use of your spatula).Mix them gently and make sure its well combined without any bubbles.Batter should be thick and smooth.Next add the mixed dates and walnuts and lastly add the chocolate chips.Mix gently.
Transfer the mixture in a greased square baking pan the size of 9×9.Bake at 350 or 180 for 30 to 40 minutes.Cool and cut into square bars.Now you have delicious bars, enjoy!
Here is the mixture,The result is amazing anyway…see the batter with its golden brown color and its thick smooth consistency..dates and nuts are all in.. and…it really has no chocolate chips but if its for the gods,then I might as well add Chocolate Chips..What do you think?
I cant wait, I am so excited..I forgot …the good old expression..”let it cool first”..I made the mistake of cutting and eating my bars at the same time.Oh no..my precious butter fingers..you cannot do two things at the same time…OK?
I decided to continue anyway,what done is done..I cant do anything more..but I can do anything less… take some..take some…and enjoy while its hot!
