My Apple Carrot Muffin

I was craving for something sweet and I cant figure it out..Hmmnnn..could it be cake or a chocolate? I dont know ..I just wanted something soft and sweet and something like a cake maybe. I went to the kitchen and opened the fridge and I saw some apples and carrots. At first I thought of Banana Cake but then I have headache so I cant just go out of the house to buy some bananas. Well, I grabbed some apples and carrots and proceeded to make my muffins. I never thought that this combination will freak out my husband and my son…yes..they thought its disgusting. Thank goodness,my daughter loved my muffins. At first I told my son its Banana Muffin and he began to eat. Then I told him..it was apple and carrot muffin, he freaked out and went away from the table. My husband laughed and told me that the combination was awful or out of this world. But I am just like that…as you can see my combinations would surprise them and wonder what is all about.I desperately convinced them that it tasted good because I love the outcome and I already ate four in a row…The next day I brought some for my co-workers and surprisingly they found my muffins good and yummy.Wow..these ladies surprised me really and I am glad they loved my muffins. After an hour my husband sms me and told me that he ate the left over muffins for breakfast and he told me that it was actually good..soft and fluffy. He thought the combination went fine after all. The problem was, he ate all of them and they were meant for my daughter. Now I need to make a new batch…

Here is the recipe:
2/3 cup sunflower oil
4 large eggs
1 cup grated apple
1 cup grated carrots
1 tsp vanilla
2 cups flour
1 and 1/4 cup brown sugar
1 box 3.5 ounces French Vanilla Pudding
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
In a bowl sift together the following:flour,brown sugar,vanilla pudding,salt,baking powder,baking soda and cinnamon.Set aside
In another bowl,mix oil,eggs,grated apple and carrots and vanila.
Add the flour mixture to the egg mixture and mix until well blended.
Transfer the mixture into muffin liner and bake at 380 for 15 to 20 mintes.
Now its about time to enjoy the out of this world muffin!
                                                                                 

Out of this world? Weird combination?….no no NO! a big NO…actually its exciting and fun to make them…a fun way to cure my headache and I just love the result.

                                                                          

Here they are..fluffy,soft and moist.I never thought apple and carrot would be this great.Next time Im gonna have to try them with icing…I bet they will be good as cup cakes too!Wanna try them?

Oreo and Cream Muffins (For My Honeypie)

Our darling daughter whom we call Honeypie has turned 10 weeks ago..(sorry Honey, your mom is kinda late with your birthday post) The years went  fast and I realized my little girl is no longer here. She is now against with pink color while her mom is still attach to it..silly mom!  Perhaps I am fond of pink because it reminds me of my precious little girl who walks around in pink… from head to toe. I do miss those Barbie days too and I wont forget how his brother who was around 10 or 11 years old  at that time and he would play alongside with her… pretending those barbie dolls were  participants in a wrestling match…No need to describe how miserable those barbie dolls looked in the end…if they could only speak and complain about the abuse and pain..lol! In the end mommy and daughter will go to the mall and buy new ones…haaay!
My little girl  who is now a pre-teen is conscious of her weight and constantly bickering about it. She also noticed my sense of fashion. One time she told me..”Mom, how come your clothes are mostly black, white and other dark ones”…I know she just wanted to tell me that I look boring! Now I started to go back playing with colors and its fun. I started to realize that somehow my daughter who can draw, sing, write ..has also a flair for fashion.I silently miss my little girl. I miss her little hands holding mine every time. The way she pulled my hand whenever we go shopping..her morning breath…her funny laughs and her sudden outburst of temper. I wanna write more. I wish I could but I am getting sentimental and I dont like it…maybe next time.
Anyway, take a look at my muffins. Such precious  medium babies…I will never get tired baking them for my Honeypie. I decided not to put any frost cause you know shes also cutting down from sugar..oh la la!

Ingredients:
1 butter unsalted melted
1 cup milk room temperature
2 tsp vanilla
2 1/4 cup flour
2 tbsp flour
1 tsp baking powder
1/2 tsp baking soda
1 cup sugar
3 eggs separated
24 pcs oreo, top removed and kept aside.
12 pcs oreo cut each into 4
Frosting:
Vanilla B uttercream Frost
1/2 cup butter room temperature
4 1/2 cup powdered sugar
2 tsp vanilla
6 tbso milk room temperature
 
Twist oreo cookie ( 24 pcs) place cookie wafer with filling on it side up in the bottom of each cupcake liner.
Mix flour,baking powder and baking soda.Set aside.Cut cookie (12 pcs),each cookie into 4.Set aside.
Cream butter,eggyolk,milk and vanilla together until creamy and fluffy.Add in gradually the flour mixture.
Stir in sugar.Beat on low speed for 30 seconds then turn to medium speed and beat for 2 minutes.
Add egg whites and beat for 2 more minutes.Then add the quartered cookie using spatula, just mix slowly..until the quartered cookies are fully submerged.Fill cupcake liner about 3/4 and bake for 20 minutes at 350.
 
How to frost:
Remember the other half of cookie ( 24 pcs) get them and crush with the use of rolling pin or any type na gusto mo basta durog.Then in a large mixing bowl,cream butter until fluffy,gradually add powdered or icing sugar,add vanilla and milk for consistency.Once you reach your desired consistency, sift crushed oreo cookies into frosting.Stir carefully until combined.Frost cupcakes and garnish with mini oreos if you like.( mine..I just sprikle some crushed oreos on top)
                                                                   

Our Honeypie! she asked my husband…”Daddy, bakit tayo magkamukha?’ or “Daddy, how come I look like you.’ My husband and I laughed our heart out..I laughed hysterically and I cant stop myself from laughing. I know my daughter well. She always wish she looks like me… Its alright Honey, Daddy loves you and  you are beautiful just the way you are and I love you too! 

Well back to my daughters muffins..yes they belong to her..you cant just grab and eat them..lol! just kidding. The first time I made them, I was hesitant to add the cream but I decided to try anyway and no regrets cause they turned out so good…


The frost is also a must because it adds pleasure…and they taste good..so good that you will have to grab at least two.. no ..I mean five..yes, it was five in a row..and I have no regrets..anyway Im on a diet…Lol!….
