Kocina De Pinay’s Meat and Potato Pie

I miss my place, you know I havent been here for almost two months. My work and our family’s vacation back home has taken my time. Now Im back and I would like to start my year with one of our favorite pie. It was a dish that I learned to do when my kids were little. Back then,they dont appreciate it and now that we’re here, I tried and they liked it. From then on whenever I cant think of anything to cook for them, this meaty pie is always a versatile choice.

Any pie dish will do and this one is around 12cm. Dont forget to brush the dish with butter…lots of butter.

Now add the cooked ground pork and beef. I cant control my excitement.I know that in a matter of an hour, the whole pie will be gone.

I always make my own mashed potato because its creamier, lovelier, tastier and most of all, it is cheaper if you make your own.

I love the combination of  white and red cheddar with mozarella..I used a lot…the more the merriest..Oh it looks so good.

Yeah, this is better, cover loosely..you dont want all your cheese to get caught with foil…by then you will lost all the magical touch of cheese.

I love the smell, its heartwarming and delicious. I cant help myself…Im gonna eat now..pronto!

Oh how I love this combo because it is always a hit on our table The combination of ground beef and pork with spices at the bottom and on top is a buttery, creamy and cheesy mashed potato. My gracious pie wont mind the mess..just grab and eat the way it is.This is one comfort food that I love to make again and again…

These days I rarely clean my kitchen cupboards because I dont have time or I am too tired to do it or I just couldnt care any more. Besides it would always appear in two ways..crampy, messy with a pack of this and that, mainly left over of everything or it could be spacious, empty and crying for refill… lol! Anyway last week I found time, I checked and oh boy! I found a lot. I think that I will need to care this time and bake…bake..bake..

Please welcome the first among the set of goodies  and honestly these nutella cereal mix squares are promising. I am inspired to just leave my cupboard the way it is.. refill..refill.. then bake bake bake.. Oh goodness, when I clean then it means more yummy treats. My son recently is complaining that I am ruining his diet regimen. You see my son is a health buff.. He goes to gym, He jogs and he is conscious of his food intake. These nuttela squares are such a tempatation to him and you know his mom..and thats me..Im a big Demonyita… go ahead my dear son.. enjoy…LOL

The taste is so incredibly good…I never thought Nuttela would go better with Fitnesse Fruit Mix. They are lovely and forgive me..as I photograph them I also eat them…bite ..bite..bite…

Take a look, come closer..dont go please..lol! Im seeing fruits, cereal, walnuts and choco.. the texture is soft yet a little crunchy and nutty. Why would I deprive myself from enjoying these squares of joy..no I wont but I dont have time so I told myself..ok  tomorrow I will enjoy them…

I needed to make them feel that they are secured and truly important so I arranged them like muffins nevertheless they wont be safe..in an hour or two..they will be gone. I am so dumb.. how come I didnt keep for myself. Arriving home late, I have craving and they are nowhere to to be found… all gone.. Thank you..

Baked Tuna Mushroom Macaroni

This is one perfect dish that I always love to make. Whenever I ran out of idea, this serves as a saviour and it comes out a winner all the time. Going back to work and I am early 40’s, I needed to make meals that are easy to make and likewise healthy. I love that its creamy yet its light and easy to digest. I remember I started to make this on the first year of our life here in Singapore. It also marked the learning process that I will soon discover and from then on I never stopped. I have great passion on discovering what will be my family’s greatest favorite ever..dishes that they will never forget and remind them of our family. Why do I talk this way..I am so silly..  it’s just that everyday I see my kids and they are growing so fast. My son is already in college and now my daughter is about to enter a new phase in life..she’s gonna enter secondary level and if I could only turn back the hands of time. Of course I can’t. you can’t and nobody can… is there anyone here who can?.. lol!

Anyway I remember these things while on journey and still I am in my greatest journey ever..the journey of baking, cooking and writing… Sometimes, in the middle of the night I can’t get to sleep so my therapy is my kitchen..do something which is worth of my sleep. For this recipe I learned that: a cup of sour cream could also be a 3/4 cup of fresh milk with a tbsp of vinegar.

Do not put oil when you boil water for pasta..just add salt.Do not rinse pasta

just drain the water used for boiling or cooking the pasta.The tendency when you rinse with water,you lost the flour content which makes pasta thick and yummy.Do not put oil cause when you put the sauce,it will not absorb the sauce.pasta will be slippery and will not absorb the creamy taste of your sauce.

Part of my journey is getting messages from people all over the globe which I treasure a lot. Ingredients:

3 cans tuna flakes in water, drained

1 pack 500 grams macaroni

1 medium onion chopped

1 can whole mushroom, sliced

1 can (10 ounce) cream of mushroom soup

2 cans fresh milk ( mushroom can as measuring cup )

1/4 cp flour

1 cup sour cream

1/2 cup butter, melted, divided

1/4 cup bread crumbs

1/2 cup shredded mozzarella cheese

1/2 cup shredded parmesan cheese

1 tsp salt

1 tsp pepper

1 tsp sugar

Cooking Directions:

  1. Boil macaroni until just cooked, do not overcook because it will be baked.
  2. Now in a bowl, put the cream of mushroom and milk together.
  3. Whisk well until fully combined and no lumps
  4. Divide butter into two, take the first half
  5. Heat a pan, put a little oil and butter, sauté onion until translucent
  6. Add sliced mushrooms and sauté for about 2 minutes. Heat  off. Set aside.
  7. Using the same saucepan, put a little oil and put the 2nd half of butter
  8. While the butter is melting, put the flour, whisk or stir well until it seems pastelike
  9.  Slowly put the creamy mushroom milk mixture. Keep on stirring while cooking on low fire. note:mixture should be thick but not so thick and not so thin
  10. Put salt, pepper and sugar. Heat off.
  11. Next, in a big bowl or saucepan, combine cooked macaroni, onion and mushroom mixture, tuna, mushroom soup milk mixture and sour cream.
  12. Stir well until combined and put in a baking dish. Cover with aluminum foil and bake for 30 minutes at 350 or 180. Remove aluminum foil and sprinkle cheese on top.Bake for another 10 to 15 minutes or until cheese melted.

As you can see, its thick and creamy and I know you wont turn your back.. it’s a great temptation and its fine..you can indulge and enjoy. I made 2 cups of Mornay sauce and pour all of it on top..I cant describe the thrill..of eating…oh my..

Oh this chunk of goodness might be a mistake cause im trying to stay away from dairy but tonight I will give in to the pleasure..yummy creamy cheesy milky with tuna,mushroom and macaroni..its now or never..

When I started not to care about how pretty the way my cake looks, it gave me courage and enjoyment to continue baking. This is one coffee cake that seriously knocked me down.. because it was so good. I even don’t have coffee essence at home although I always include it on my list but I seem to forget it all the time. Then came one perfect boring day and I wanted something sweet, something different, something that will satisfy my craving. Guess what, why not make a coffee cake? I was hesitant at first because I only have the normal coffee granules in my cupboard but the experimental side of me invaded my imagination.

Good thing I have a small jar of coffee granules in my cupboard. Years before, I used to be a coffee lover but for some reasons I suffered from fibrosystic disease so the doctor advised me not take coffee anymore. But the coffee addict inside me would sneak from time to time and when I am all alone I would enjoy a cup of hot coffee. Oh good gracious coffee, it makes me alive and wonderful. Perhaps coffee flavor in a cake would bring a different twist and I was right after all.

Ingredients:

2 cups flour

1 1/2 cup sugar

1/4 tsp salt

1 cup butter

3 tbsp coffee granules

1/2 cup buttermilk

2 whole eggs

1 tsp baking soda

2 tsp vanilla

For the icing:

3/4 cup butter

450 grams powdered sugar

3 tbsp coffee granules

1/4 salt

4 tbsp heavy cream

Note: You may add garnishing on top..I used chocolate chips

Directions:

Preheat oven to 350. Grease and flour two round baking pans. In a large bowl mix sugar, flour and 1/4 tsp salt. Set aside.

Melt butter in a pot over medium low heat. While melting, add 3 tbsp coffee granules to 1 cup hot water..as in hot water. Set aside.

Once butter has melted, add coffee mixture. Let it boil for 10 seconds, turn off the heat and set aside.

In a separate bowl, combine: buttermilk, eggs, baking and vanilla. Mix until well combined.

Pour butter/coffee mixture into the flour mixture. Stir the mixture together gently. Once the heat cool down, add the egg mixture. Mix well.

Pour in to the prepared pans and bake for 20 minutes. Allow to cool the cakes completely.

For the icing: combine all ingredients then frost the cake. Chill for an hour before serving.

I don’t have chocolate coffee beans or nuts..I am supposed to have walnuts but you see sometimes a twist of palate would turn me nuts so I would eat almonds, pecan, walnuts when I am busy cooking in the kitchen. When I need them the most..theyre all gone. Good thing the ever dependable chocolate chips in a box is always there.

Oh, look at that, she is not pretty…I know ..I know..with such imperfect curves but I tell you this is such a magnificent cake. Its coffee, its sweet, its strong, the aroma is extra ordinary and yes.. again..its coffee.. a coffee cake. The moment I tasted it, I laughed, I giggled and I have this gigantic smile because I have made such imperfect shape of a cake but it is so natural and I would rather leave her that way..

I have had a slice,  go ahead, take yours.. I never thought coffee granules would be terrific in a cake. Every one in the family fell in love with the coffee cake. This is a serious situation..if there’s a will, there’s a way…I am a coffee addict and its bad but I found a way..turn coffee into a cake and it’s just right..so right..

Creamy Chicken Veggies In A Puff Shell

I used to cook this when my kids were just little ones. My son adores white creamy sauce with lots of cheese. I don’t blame him, I think most of us love white sauce and in my case I can indulge and eat …but my body will react differently..I will get bigger and that’s bad. One time, inside the train, an elderly woman offered me her seat … I declined of course with kind words and a smile. I was sure she thought I was pregnant. Oh my… I was not pregnant…I just looked like a pregnant woman! It was so embarrassing and funny but it made me act on it. I tried to lose some weight and I just did… oh well, yeah for a time.. nowadays…my goal is again to lose weight…the quest to lose weight is really never ending.

For this recipe, I used puff pastry and I just bought one in a grocery store. It saved me time and energy. I would love to make my own but I am a working mom and since this is quite an easy recipe therefore I sticked to my guns..using store bought pastry was the best option. Honestly it was fun to do this. This is now a mainstay in my kitchen. Whenever I ran out of idea, I will just resort to it. Here’s a link that I found in  You Tube. Baked Chicken Tortilla Wrap

I first encountered Tortilla wrap in the Philippines. I can only buy it in the supermarket and the price is quite expensive but I dont mind because my children enjoyed it. Since I decided to become a homemaker,my focused(until now)was to make variety of meals in the kitchen. I love every occasion. I love Birthdays and Holidays because it means cooking and family gathering.My first cookbook was Good Housekeeping Philippine Version. I got addicted to it that yearly I would buy to add to my collection. Yearly the publication releases Good Housekeeping Cookbook. I found my first tortilla recipe in one of these cookbooks. The recipe was simple and it is called Quesadillas and that started my love for cheese. I have great love for cheese but in the Philippines,cheese is also expensive and limited but we have the local goat cheese which I dearly love.

But now I live in another country which is quite closer to the Philippines and the fare is economical too. We can go home anytime we want to. Singapore has a wide array of food and if you really love to cook, you will find a lot of new ways to cook in this place. I love the fact that I live in a small country. The environment is safe and the transportation is not only efficient but also very comfortable. It is somehow a safe place with great education and the weather maybe unpredictable but its just fine because theres no typhoon in this country. Here I discovered Tortilla wrap too and theres more and it made me so happy. Theres more cheese and my heart leaped when I saw them. I love the kitchen!I developed this sense that If I could make and preserve family recipes then my children and grandchildren in the long run will be happy.There will be family and tradition and the best part of it is food.

Here is my Baked Chicken Tortilla Wrap.I made this for my son’s birthday.My son who turns 15 yesterday.I am blessed to have him as my son.I pray that he wont change and that he will be safe travelling the road ahead.I hope that what he learns at home will be enough to carry him while discovering the outside world…our home is very different outside..its the reality.Well,another year added to my age and another more for my marriage and life goes on.

Ingredients:
10 pcs Tortilla Wraps,plain
1/2 kg (500 grams)cooked chicken breast,shredded
2 cups potato,cut into small cubes
1 can of whole mushroom,drained and sliced
150 grams bacon,chopped
1 medium onion chopped
3 cloves garlic,grated
1/4 cup butter
1 tbsp oil
1 tsp pepper
1 tsp sugar
1/8 tsp salt
For the Bechamel Sauce:
1 stick or 1/2 cup butter
1 tbsp oil
1/2 cup all purpose flour
3 cups milk
4 1/2 cups chicken broth
1 tsp nutmeg
1 tsp ground pepper
1 tsp sugar
1/4 cup parmesan cheese
For garnish on top:
1 cup mozarella grated
1 cup red and white cheddar grated
 
First,make the Bechamel Sauce
Heat a sauce pan,add a tbsp of oil and then add the butter
Put the flour and mix until it turns into crumbs
Now add the milk and continue stirring until theres no lump
Then add chicken stock,nutmeg,pepper and sugar.
Continue stirring until you reach the desired consistency(not thin but not so thick)
Now,time for the chicken and company
Heat the pan and add 1 tbsp oil then put bacon,cook until brown and oil comes out.
Set aside and using the same pan (do not take out the bacon oil)add 1/4 cup butter.
Saute garlic,onion and add the potato, cook for 30 seconds then add the chicken.
Cook for about 3 minutes then add the fried bacon and mushroom.
Add 1 1/2 cup of the bechamel sauce
Season with salt.pepper and sugar.
Add parmesan cheese,mix and then turn off the heat.
Now you can wrap the mixture using tortilla wraps
In a baking pan,put bechamel sauce just to cover the bottom
Then line tortilla logs over it,put bechamel sauce on top.
Sprinkle lots of cheese and bake at 350 or 180 for 45 minutes
