My husband discovered oatmeal cookie through our daughter.We went to Ikea one afternoon and my daughter who loves cookie decided to buy a pack of oatmeal cookie.I am not into oatmeal cookie…I wouldnt even bother take a look at it but my daughter find it so good.My husband got tempted,he took one piece..he told me..”oh its good”…I doubtfully responded,”really?ewwww!I dont like that”..! Well,apparently they have the same taste and they look alike too…so I formulated this cookie for them ..in the end all three of them including my son love oatmeal cookie.. I bake..because of them.
1/2 cup butter softened
1/2 cup sunflower oil
1 /2 cup Brown Sugar
1/2 cup white Sugar
2 whole Eggs
1 teaspoon Vanilla
1-½ cup All-purpose Flour
1 teaspoon Salt
1 teaspoon Baking Soda
3 cups Quick Oats
½ cups Finely Chopped walnut
In a large mixing bowl, cream butter,oil with both sugars until well combined.
In a separate bowl, beat eggs together. Add vanilla and stir to combine.
Add to the butter/oil/sugar mixture and mix well.
In a separate bowl combine the flour, salt and baking soda.
Mix carefully into the egg/vanilla/butter/oil/sugar mixture until well combined.
Now add the quick oats and mix well again.
Finally add the finely chopped pecans and mix well to combine.
Divide the dough in half and place each half of the dough onto a sheet of waxed paper.
Roll the dough into a log and then wrap it tightly in the waxed paper.
Chill or freeze the dough for about 30 minutes.
Then take out the cookie dough, slice 1/4 inch thick per cookie dough round.
Bake at 350 degrees for 10 minutes until they are golden brown.
Here they are..I may not like them but I still happily make them for my husband and children…they all love these beautiful crispy nutty cookies…
Hmmmnnn..take a look, I cant describe them..yes, it must be good cause they told me its good…I just bake them..in the end..yeah..I have to admit that it is really good…perhaps I need to consider and join my husband and children..Oh for the love of Oatmeal cookie!
