Our darling daughter whom we call Honeypie has turned 10 weeks ago..(sorry Honey, your mom is kinda late with your birthday post) The years went fast and I realized my little girl is no longer here. She is now against with pink color while her mom is still attach to it..silly mom! Perhaps I am fond of pink because it reminds me of my precious little girl who walks around in pink… from head to toe. I do miss those Barbie days too and I wont forget how his brother who was around 10 or 11 years old at that time and he would play alongside with her… pretending those barbie dolls were participants in a wrestling match…No need to describe how miserable those barbie dolls looked in the end…if they could only speak and complain about the abuse and pain..lol! In the end mommy and daughter will go to the mall and buy new ones…haaay!
My little girl who is now a pre-teen is conscious of her weight and constantly bickering about it. She also noticed my sense of fashion. One time she told me..”Mom, how come your clothes are mostly black, white and other dark ones”…I know she just wanted to tell me that I look boring! Now I started to go back playing with colors and its fun. I started to realize that somehow my daughter who can draw, sing, write ..has also a flair for fashion.I silently miss my little girl. I miss her little hands holding mine every time. The way she pulled my hand whenever we go shopping..her morning breath…her funny laughs and her sudden outburst of temper. I wanna write more. I wish I could but I am getting sentimental and I dont like it…maybe next time.
Anyway, take a look at my muffins. Such precious medium babies…I will never get tired baking them for my Honeypie. I decided not to put any frost cause you know shes also cutting down from sugar..oh la la!
1 cup milk room temperature
24 pcs oreo, top removed and kept aside.
12 pcs oreo cut each into 4
Vanilla B uttercream Frost
1/2 cup butter room temperature
6 tbso milk room temperature
Twist oreo cookie ( 24 pcs) place cookie wafer with filling on it side up in the bottom of each cupcake liner.
Mix flour,baking powder and baking soda.Set aside.Cut cookie (12 pcs),each cookie into 4.Set aside.
Cream butter,eggyolk,milk and vanilla together until creamy and fluffy.Add in gradually the flour mixture.
Stir in sugar.Beat on low speed for 30 seconds then turn to medium speed and beat for 2 minutes.
Add egg whites and beat for 2 more minutes.Then add the quartered cookie using spatula, just mix slowly..until the quartered cookies are fully submerged.Fill cupcake liner about 3/4 and bake for 20 minutes at 350.
Remember the other half of cookie ( 24 pcs) get them and crush with the use of rolling pin or any type na gusto mo basta durog.Then in a large mixing bowl,cream butter until fluffy,gradually add powdered or icing sugar,add vanilla and milk for consistency.Once you reach your desired consistency, sift crushed oreo cookies into frosting.Stir carefully until combined.Frost cupcakes and garnish with mini oreos if you like.( mine..I just sprikle some crushed oreos on top)
Our Honeypie! she asked my husband…”Daddy, bakit tayo magkamukha?’ or “Daddy, how come I look like you.’ My husband and I laughed our heart out..I laughed hysterically and I cant stop myself from laughing. I know my daughter well. She always wish she looks like me… Its alright Honey, Daddy loves you and you are beautiful just the way you are and I love you too!
